The interesting thing about science is that there are almost infinite opportunities for investigating. Your first two suggestions indicate you might be interested in materials used to create different colors or what useful materials are produced by plants. There is a large body of scientific work in both of these areas. There is undoubtedly a large body of work in the specific area of dyes extracted from plants. There are many aspects of this you could research. One interesting thing to me is that plants have been used to dye cloth for a very long time (about as long as humans have known how to make cloth).
